A combination of lemon zest and juice make for a refreshing fish dish that benefits from a quick marinade and simple sauce. Ingredients
  • 9 oz flounder fish fillet
  • 2 tsp cornstarch
  • Sauce: 1/2 lemon, 1 tomato (fine diced), 1 zucchini (fine diced), 1 tsp sugar, 1/4 tsp salt, cornstarch solution – 1 tbsp cornstarch mixed with 2 tbsp water, 4 fl oz water
  • Marinade: 1 1/2 tsp Knorr® Chicken Broth Mix, 1/2 tsp salt, 1/4 tsp white pepper, 1 tsp Shao Hsing cooking wine

Grate the lemon zest and squeeze out the lemon juice into a small container. Set both to one side and, in a separate bowl, mix the marinade ingredients.

Pat dry the fillet of flounder with paper towels, then slice it into 1” pieces. Marinade the fillet for at least 15 minutes.

Dust each slice of the fish with a little cornstarch, then pan-fry over a low heat. Once the fish is lightly brown, remove from the heat and set aside.

Bring a saucepan of water to the boil, reduce the heat, and throw in the lemon zest. Add diced zucchini, tomato, lemon juice, salt, and sugar. Bring the pan to the boil again, then whisk in the cornstarch to thicken the sauce.

Dish up the fillet of fish and pour over the sauce once it has reached the desired consistency.
