  • 226g (1 package) of Yee Mein/Long Life Noodles
  • 8 dried shiitake mushrooms, rehydrated in warm water for 30 minutes and sliced
  • 1 cup carrot, julienne
  • 1 cup carrot, julienne
  • 1 bunch green onions or chives (yellow or green), cut into 1.5 inch1.5-inch pieces
  • ½ cup bamboo shoots, julienne (optional)
  • 1 tbsp oil

    • Sauce
    • ½ tsp Knorr Chicken Powder
    • 1/4 tsp sugar
    • ½ tsp Knorr Liquid Seasoning
    • ½ tsp dark soy sauce
    • 1 tsp oyster sauce
    • 1 tsp Shaoxing wine
    • 1/4 cup water

In a large pot of boiling water, cook the yee mein or long lifelong-life noodles according to package directions. For chewier noodles, remove from boiling water 1-2 minutes before it’s fully cooked. Drain and set aside.

In a small bowl, combine all of the sauce ingredients and mix well.

Heat 1 tbsp of oil in a wok over medium high heat. Add mushrooms, carrots, bamboo shoots and stir fry until fragrant.

    Add sauce and mix thoroughly.

Add the noodles and stir fry until the noodles have soaked up all the sauce. Add chives/green onions and toss for another 30 seconds.

If the noodles become too dry, add a bit of water or oil. Try not to break the noodles as you’re tossing them!

Plate noodles onto a large serving plate and enjoy!
