Ingredients

  • 2 to 3 lbs of catfish cleaned and ready to go
  • 1 tbsp of cooking oil
  • 1 onion
  • 2 to 3 oz of rock sugar
  • 1 pack of Knorr Tamarind Soup Mix
  • 1/2 tbsp of fish sauce
  • 1/2 cup of rice paddy (ngò om)
  • okra
  • Thai basil (optional)
  • 14 cups of water
  • 2 to 3 tomatoes
  • 1 tbsp of minced garlic
  • 2 tbsps of Knorr Chicken Powder
  • 1 tsp of MSG (optional)
  • 1/2 cup of sliced pineapple
  • Elephant ears (bạc hà)
  • Bean Sprout
  • Jalapeño (optional)

Canh Chua

Canh chua or cá nấu (cooked fish) is a Vietnamese sour soup that is known for its bright and tangy flavors. The soup typically features a mix of fish or shrimp, vegetables such as tomatoes and okra, and sour elements like tamarind or pineapple. Our version is made with Knorr Tamarind Soup Mix for the perfect balance of sour and savory every time.

Preparation

  1. In a pan add cooking oil, garlic. Fry until garlic fragrant. Add tomatoes and onion. Sauté for 2-3 minutes and set aside.

  2. Bring water to a boil.

  3. Add MSG, sugar, Knorr Chicken Powder, Knorr Tamarind Soup Mix, fish sauce and fish. Cover and bring to a boil.

  4. Uncover and scoop out all the scums.

  5. Add sauté tomatoes, pineapple and okra.

  6. Bring to a boil and low to simmer for 6-8 minutes. Taste and adjust.

  7. Add elephant ears. Continued to let it cook for another 2 minutes then turn off heat.

  8. Add rice paddy.
