Longevity Noodles

Ingredients

  • 226 grams (1 package) of Long Life Noodles
  • 1 cup of carrot julienned
  • 1 bunch of green onions or chives (yellow or green) cut into 1.5cm pieces
  • 1 tbsp of oil
  • 8 dried shiitake mushrooms rehydrated in warm water for 30 minutes and sliced
  • 1/2 cup of bamboo shoots julienned (optional)
  • 1/4 tsp of sugar
  • 1/2 tsp of dark soy sauce
  • 1 tsp of Shaoxing rice wine
  • 1/2 tsp of Knorr Chicken Powder
  • 1/2 tsp of Knorr Liquid Seasoning
  • 1 tsp of oyster sauce
  • 1/4 cup of water

Longivity Noodles

The long noodles represents “long life” and blessings to the loved ones. With the help of Knorr Chicken Powder, this simple dish has loads of flavors even without any protein and is perfect for all special occasions including birthdays and Lunar New Year.

Preparation

  1. In a large pot of boiling water, cook the yee mein or long lifelong-life noodles according to package directions. For chewier noodles, remove from boiling water 1-2 minutes before it’s fully cooked. Drain and set aside.

  2. In a small bowl, combine all of the sauce ingredients and mix well.

  3. Heat 1 tbsp of oil in a wok over medium high heat. Add mushrooms, carrots, bamboo shoots and stir fry until fragrant.

  4. Add sauce and mix thoroughly.

  5. Add the noodles and stir fry until the noodles have soaked up all the sauce. Add chives/green onions and toss for another 30 seconds.

  6. If the noodles become too dry, add a bit of water or oil. Try not to break the noodles as you’re tossing them!

  7. Plate noodles onto a large serving plate and enjoy!
