Peel loofah and cut into 1.5” pieces. Scoop out the center, then marinade.
Pre-heat a saucepan with oil and pan-fry the minced garlic. Remove half of the garlic and continue frying the remaining half until golden brown. Combine both types of garlic in a single bowl and add the seasoning. Mix well.
Wash scallops and pat dry with a paper towel. Season with salt and pepper and put to one side.
Cook the konnyaku noodles according to packet instructions. Drain and set to one side.
Plate up the noodles first and then arrange the loofah on top. Sprinkle minced garlic over the dish and place the scallops on the loofah. Steam for 10 minutes and serve immediately.
