  • 1 Whole Chicken (Use brown chicken or poached Chicken)
  • 1 tbsp Knorr Chicken Powder
  • 1-2 cups Premium Soy Sauce
  • 1 cup Rock Sugar
  • ½ cup Mei Kuei Lu Chieu (Chinese Rose Wine)
  • 3-5 cups Water
  • 5-6 Brown Shallots
  • 10 Garlic Bulbs peeled
  • 2-3 oz Green Onion
  • 1-2 oz Sliced Ginger

Marinate the whole chicken with salt for 10 minutes.

Boil a pot of water and place the whole chicken into the pot. Blanch the chicken 10 seconds, and transfer from the simmering water to the ice bath. Repeat for 2-3 times until the chicken skin is set.

In a pot over medium-low heat, add 1.5Qt water, rock sugar, Knorr Chicken Powder, premium soy sauce, green onion, ginger, Chinese rose wine, brown shallots, garlic, and whole chicken. Simmer for 25-30 minutes, and flip the chicken every 5-10 minutes. Then, turn the heat up, cook a few more minutes until sauce thickens and chicken skin turns brown.

Cool the chicken, then cut into slices and serve.
