This classic Filipino chicken soup is the perfect comfort food. Tender chicken is simmered in a flavorful ginger broth along with aromatic smoky flavors from pepper leaves and a touch of sweetness and texture from papaya. This hearty soup one is of the most popular and well-loved dishes in the Philippines for a reason!

Ingredients
  • 2 lbs. chicken, cut up
  • ½ bulb garlic, smashed
  • 1 medium onion, diced
  • 1 tbsp. ginger, grated
  • 3 tbsp. fish sauce
  • 1 liter water
  • 4 tbsp. Knorr Chicken Powder
  • 1 medium almost ripe papaya, sliced into 1-inch cubes
  • 3-4 cups pepper leaves

Heat 2 tbsp. cooking oil in a medium high heat Dutch pot. When hot, sauté garlic, onions & ginger until sweated, about 3 minutes.

Add chicken & fish sauce. Sauté chicken pieces to golden brown, around 5-6 minutes.

Pour water to the pan. Add Knorr chicken powder. Bring soup to a boil. Once sauce is boiling, cover and simmer for 25 minutes or until chicken is cooked.

Add papaya and cook for another 5 minutes.

Adjust the flavour of the soup. Add fish sauce in increments of 1 tbsp for more flavour depending on your taste.

Add pepper leaves to the soup and cook for another 3 minutes or until the leaves wilt.

Turn off heat and place in serving bowl.

Serve with a steaming bowl of rice & a side of fish sauce & lemon as dipping sauce. Enjoy!
