This quick and easy recipe for creamy coconut apple soup is satisfyingly thick, hearty, and delicious. A simple delicious soup to make with Knorr® Chicken Broth Mix as the base to bring all the flavors together. It’s healthy and a sure favorite of everyone who tries it.
Sauté onion, garlic, ginger in a large pot over medium high heat for 5 minutes.
Add the carrots and apples in the same pot and sauté for another 5 minutes.
Add 2 tsp of Knorr® Chicken Powder with 2 cups of water. Continue to stir over medium high heat for 10 minutes.
Reduce heat to medium. Using a hand blender, carefully blend everything in the pot.
Add coconut milk, cumin and coriander. Cook for 5 minutes.
Serve with extra coconut milk and coriander leaves for garnish. Enjoy!!
