Preserved plum gives the shrimp balls a pleasing sweetness, while Knorr® Chicken Broth Mix supplies a contrasting, savory umami flavor. Layer upon layer of sweet, cheesy, seafood flavors make this dish a true treat to indulge in on special occasions.
- 8 oz shrimp
- 4 pieces preserved plum
- 4 slices cheddar cheese
- 10 spring roll sheets, shredded
- sprinkle of cornstarch
- Cheese sauce: 4 slices cheddar cheese, 2 tbsp onion, chopped, 1 tsp Knorr® Chicken Broth Mix, 1/2 tsp sugar, 1/2 tsp cornstarch, 1/2 cup water
- Seasoning: 1 tsp cornstarch, 1/2 tsp salt, 1/2 tsp sugar
Place the shrimp into the food processor with the seasoning and blend until sticky. Cut the preserved plum into small pieces, then steam until soft and set aside.
Cut the cheese into squares. Place a small amount of plum in the center of each square and fold the cheese over to enclose the plum.
Mold the shrimp paste into balls and stuff the cheese packets into the center. Dip each ball into a bowl with the shredded spring roll, then set aside.
Heat oil in a pan to 175-190F. Deep fry the shrimp balls for 4-5 minutes, then place on a dish and set aside.
For the sauce, sauté the onion until transparent. Add the water, starch, Knorr® Chicken Broth Mix, and sugar to the onion and bring to a boil. Add the cheese slices and cook until they melt.
To serve, either pour the cheese sauce over the shrimp balls or set aside to use as a dipping sauce.
