These simple macaroni salad ingredients combine for a dish that’s sweet, salted, and blissfully delicious Lady’s Choice® Sandwich Spread gives the delicious creaminess, while the large serving size makes it ideally suited to those occasions when there’s more than a few hungry mouths to feed.

  • 6 pcs Chinese sausages, diced small
  • 1 medium size yellow onion, peeled and diced small
  • 5 cloves garlic, minced
  • 8 stems of scallions chopped
  • 6 sprigs celery, diced small
  • 4 tbsp mild giardiniera, chopped
  • 4 small boxes of raisins or 2 cups of raisins

In a pre-heated pan, cook your sausages for 2 minutes, then add onions, garlic, and scallions. Cook for two more minutes and set aside.


In a large mixing bowl, toss together the celery, giardiniera, raisins, olives, pineapple, Lady’s Choice Sandwich Spread, and salted duck eggs. When thoroughly mixed, set aside to chill.


Bring a pot of water to the boil and add the chicken. Cook for 10 minutes then remove the chicken and cut into small pieces. Retain the boiling water and use it to cook the macaroni according to packet instructions.


Combine the pasta, chicken, and contents of the mixing bowl, then season with salt and pepper to taste


Top with Parmesan cheese and serve at room temperature for a beautifully fresh Filipino macaroni salad.
